Recipe: Easy Blackberry Cobbler

I am getting excited about having blackberries again this year.  Even though the weather hasn't been the greatest, our blackberry bush is beginning to bloom.  Warmer weather will be here soon.

We have a blackberry bush in our backyard that is HUGE.  We are terrible at gardening, but we don't have to do much and this blackberry bush keeps growing.  I can't wait to get more this summer.

I wanted to share a recipe for Blackberry Cobbler I got out of Southern Living magazine a few years ago.  Super easy and very yummy!
  • 4 cups blackberries
  • 1/2 cup white sugar
  • 1/2 cup all-purpose flour
  • 1 large egg
  • 1 cup white sugar
  • 1 cup all-purpose flour
  • 6 TBSP butter - melted
Preheat oven to 400.

Combine 4 cups berries with 1/2 cup sugar and 1/2 cup flour.  Place in lightly greased pie plate.  You may have some extra sugar and flour mix that is left over and doesn't coat the berries.  Don't include that.

Stir together 1 large egg, 1 cup sugar & 1 cup flour until mixture resembles coarse meal.  Sprinkle over fruit.  Drizzle 6 TBSP melted butter over topping.

Bake at 400 for 45 minutes.
