I posted this recipe a while ago, but thought I'd post it again with pictures so you can see how delicious it looks! My mouth is watering just looking at the pics. :) Enjoy!
Blueberry Cream Cheese Baked French Toast
- 12 slices French bread cut into 1" pieces
- 2 - 8 oz. packages cream cheese
- 1 cup fresh blueberries (can use frozen as long as you thaw them first)
- 12 large eggs
- 1/3 cup maple syrup
- 2 cups milk

Grease 9x13 dish; place 1/2 of the bread cubes in the dish. Scatter cream cheese over the bread and sprinkle with the blueberries. Arrange remaining bread cubes over berries.

Mix and pour evenly over bread/cheese mixture. Spray underside of foil with non stick spray and cover dish with foil. Refrigerate over night. Bring to room temperature. Bake at 350 covered for 40 minutes, uncovered 10-15 minutes. Serve with Blueberry syrup (recipe below). If you don't have the patience to let it come to room temperature before baking, just add extra cooking time.
Blueberry Syrup
(don't skip this step, the syrup makes it soooooo delicious!)
- 1 cup sugar
- 2 TBSP corn starch
- 1 cup water
- 1 cup blueberries
- 1 TBSP unsalted butter

Stir in 1 cup berries and simmer 10 minutes or until berries burst. Add butter, stir until melted.

Wow - this looks so yummy! Definitely going to try.
