Recipe: Apple Muffins

IMG_1628Have you been apple picking this fall?  Our family loves to go apple picking and then we have lots of apples that we need to do something with.  I know lots of you probably make applesauce, but we don’t eat that much in our house.  One of the things I like to make is Apple Muffins.

I found this recipe on allrecipes.com…it is super easy and super yummy!  Enjoy!

  • 2 cups all purpose flour
  • 1/2 cup white sugar
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 3/4 cup apple juice
  • 1/3 cup vegetable oil
  • 1 egg
  • 2 cups diced apples

Preheat your oven to 400 degrees.

Combine flour, sugar, baking powder, cinnamon and salt; mix well.  In a small bowl, combine apple juice, oil and egg; blend well.  Mix wet and dry ingredients together until lumpy.  Stir in diced apples.

Fill cups 2/3 full.  Bake for 18-22 minutes.

Yummy!
