Favorite Summertime Recipes: Blueberry Cream Cheese Baked French Toast


I love all the fresh fruit in the summer!  Especially the blueberries and blackberries.  There are so many yummy things you can make with them.  :)

A friend of mine posted this recipe on Facebook and I knew I had to try it.  OH MY WORD!  It was AMAZING!

This was so good that my husband said, "This is better than what you could get a restaurant"!  So, I am sharing this with you.  Enjoy!  :)


Blueberry Cream Cheese Baked French Toast
  • 12 slices French bread cut into 1" pieces
  • 2 - 8 oz. packages cream cheese
  • 1 cup fresh blueberries (can use frozen as long as you thaw them first)
  • 12 large eggs
  • 1/3 cup maple syrup
  • 2 cups milk
(NOTE: this makes a lot....I cut this recipe in half for our family and we had leftovers.)



Grease 9x13 dish; place 1/2 of the bread cubes in the dish. Scatter cream cheese over the bread and sprinkle with the blueberries. Arrange remaining bread cubes over berries.In a large bowl combine eggs, syrup and milk.


Mix and pour evenly over bread/cheese mixture. Spray underside of foil with non stick spray and cover dish with foil. Refrigerate over night. Bring to room temperature. Bake at 350 covered for 40 minutes, uncovered 10-15 minutes. Serve with Blueberry syrup (recipe below). If you don't have the patience to let it come to room temperature before baking, just add extra cooking time.

Blueberry Syrup
(don't skip this step, the syrup makes it soooooo delicious!)
  • 1 cup sugar
  • 2 TBSP corn starch
  • 1 cup water
  • 1 cup blueberries
  • 1 TBSP unsalted butter
Combine sugar, cornstarch and water over med/high heat. Cook 5 minutes or until thick. Stir occasionally.


Stir in 1 cup berries and simmer 10 minutes or until berries burst. Add butter, stir until melted.
