Favorite Summertime Recipes: Marinated Cheese



Marinated Cheese...I realize you may be wondering what in the world this is.  :)  Let me just tell you, if you like cheese...at all...you will love this!

I used to sell products for Southern Living at Home, now called Willow House and discovered this recipe in one of their cookbooks (can't remember which one).

This recipe is not complicated to make, but it takes a little bit of time since you have to layer the various cheeses in rows.  It looks beautiful and tastes soooooo good!  I'm sure you will enjoy it as much as I have.

Marinated Cheese
  • 1 (0.7 oz.) envelope Italian Dressing mix
  • 1/2 cup vegetable oil (or olive oil)
  • 1/4 cup white vinegar
  • 2 TBSP minced green onion
  • 2 TBSP water
  • 1 1/2 tsp. sugar
  • 1 (8 oz.) block Monterey Jack Cheese
  • 1 (8 oz.) block Cheddar Cheese
  • 1 (8 oz.) block package Cream Cheese
  • Assorted Crackers
  • 1 (4 oz.) jar chopped pimiento
Whisk together first 6 ingredients, set aside.

Cut 3 cheese blocks in half lengthwise. Cut each half crosswise into 1/4" thick slices.
TIP: Place the Cream Cheese in the freezer for a few minutes so it slightly freezes, making it easier to slice.

Arrange cheese in 4 rows in a shallow 2-quart baking dish, alternating Monterey Jack, Cheddar and Cream Cheese.  Pour marinade over cheese.  Cover and chill at least 8 hours.

Drain marinade and arrange cheese on a platter in rows.  Top with pimiento and serve with assorted crackers.  Beautiful and delicious!
