Recipe: Strawberry Bread

I had never had Strawberry Bread until earlier this spring.  Can I say YUMMY?!?!  I found this recipe on Bargains to Bounty's blog.  She posted this when Strawberries were on sale.

Did you know you can freeze strawberries?  Just slice them up and freeze them on a cookie sheet.  Once frozen, throw them in a ziploc bag and they are ready to go whenever you want them.  You can put the frozen strawberries in this recipe without thawing them and it turns out great!  Enjoy!

  • 1 1/2 cups flour
  • 1 cup sugar
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1 - 1 1/4 cups strawberries
  • 2 eggs
  • 1/2 cup oil
Mix dry ingredients.  In a separate bowl, beat eggs with oil and vanilla.

Combine wet and dry ingredients.  Fold in berries.  The batter will seem a little stiff, but it's necessary to hold the bread/berries together.

Bake at 350 for 50-60 minutes in greased loaf pan.  Cool 10 minutes before removing from pan.
