I just made this Cream of Potato Soup for supper tonight. I got this recipe from my Aunt when my husband and I were first married. I love it! So easy to make and so good. Enjoy!
- 3 white baking potatoes (cut into bite sized chunks)
- 2 oz. bottle of Hormel Bacon Pieces
- 1 yellow onion chopped (large)
- Shredded cheddar cheese (4 oz - to use as a topping)
- 1 1/2 tsp salt
- 1 tsp pepper
- 2 cups milk
- 1 pint 1/2 & 1/2
Saute onion in a little oil (peanut/olive). Then add all remaining ingredients except for the cheese (save a little of the bacon). The potatoes will soften just perfectly as everything cooks. Simmer for 30 minutes. Don't boil. You need to watch it and stir frequently so the milk doesn't scorch.
Serve with a little cheese and bacon on top of each serving.
Sometimes I purchase some bread bowls at Panera Bread to serve this in. So yummy!
